I got together with some friends for a little Snapper fishing and shenanigans in Destin back in 2010. We were dropping cigar minnows and live pinfish on reefs anywhere from about 25 to 100 feet deep and I caught the two you see in the pic. They weren't huge but they were big enough to keep, so we did. The bigger fish is a Red Snapper but the other one is called a Lane Snapper. We fileted these fish and threw the Lane on the grill that day and it's one of the best tasting fish I've had. Very similar, but maybe even better than the Red, and it's hard to beat fresh out of the ocean.

But the meal I had with the filets from the Red you see here was amazing. I found a recipe online and sent it over to my buddy Chris who is a great cook and he hooked it up, putting those filets on a bed of angel hair pasta with Alfredo sauce. If you Google "baked snapper with garlic and herbs" it should be the first result. Try it if you like to cook and experiment.. it's so good. I'm not making this up when I say my stomach is growling while typing this. I think I need to head back to the Gulf.
